Preparation for Separation
Separate slightly more than 1% of each type of fruit/vegetable/product, and place it aside — near the rest of the produce.
Prepare the special coin used for the redemption (of Ma’aser Sheni).
Blessing for the Separation
If the fruits are considered Tevel Vadai (definitely untithed), meaning it is certain that they have not yet been tithed, you should recite the blessing before performing the separation.
If it is possible that the produce has already been tithed, skip the blessing and proceed directly to the wording of the provision:
בָּרוּךְ אַתָּה ה’ אֱלֹקֵינוּ מֶלֶךְ הָעוֹלָם אֲשֶׁר קִדְּשָׁנוּ בְּמִצְוֹתָיו וְצִוָּנוּ לְהַפְרִישׁ תְּרוּמוֹת וּמַעַשְׂרוֹת
wording of the provision of Terumot and Ma’asrot:
That which is more than one-hundredth [1] of the total here (which has been set aside separately) is hereby Terumah Gedolah, on the northern side ([2] each type according to its kind).
One one-hundredth of the produce here, along with nine portions of equal size next to it, on the northern side of the fruits (vegetables; products), is hereby Ma’aser Rishon ([2] each type according to its kind).
That one-hundredth which I designated as Ma’aser Rishon is hereby Terumat Ma’aser ([2] each type according to its kind). And Ma’aser Sheni is designated in the southern part of the fruits (vegetables; products) ([2] each type according to its kind). And if [3] Ma’aser Ani is required, then Ma’aser Ani is hereby designated in the southern part, each type according to its kind.

[1] “One one-hundredth” refers to 1% of the produce, in addition to the portion designated as Terumah Gedolah.
[2] To be said when separating from several types of produce at once — each type should be treated individually.
[3] Since it’s sometimes unclear which ma’aser year the produce belongs to, this text is phrased conditionally: if Ma’aser Ani applies, then Ma’aser Ani is designated instead of Ma’aser Sheni. It is recommended to always use this version.
Blessing of Redemption for the fruit (Chillul)
Recite the blessing only when separating from produce that is definitely Tevel (untithed), and that definitely belongs to a Ma’aser Sheni year — that is:
Tree fruits that began to grow during years 1, 2, 4, or 5 of the Shemittah cycle.
Vegetables that were picked during those years.
Grain and legumes that reached one-third of their growth during those years.
If there is any doubt as to whether the produce was already tithed and redeemed, or if the produce possibly belongs to a different year, skip the blessing and go straight to the Berachah of the Chillul below.
בָּרוּךְ אַתָּה ה’ אֱלֹקֵינוּ מֶלֶךְ הָעוֹלָם אֲשֶׁר קִדְּשָׁנוּ בְּמִצְוֹתָיו וְצִוָּנוּ עַל פִּדְיוֹן מַעֲשֵׂר שֵׁנִי
Before Reciting the Saying:
Make sure you have a coin designated for Chillul of Ma’aser Sheni.
Say:
The Ma’aser Sheni — and its additional fifth (Ḥomesh), each one according to its respective level of obligation — is hereby redeemed onto a perutah’s worth of value in the coin I designated for redeeming Ma’aser Sheni.
Anything that is not worth a perutah is also redeemed — it and its fifth — according to its value, onto the same coin I designated for this redemption.
If any fruits here are of Reva’i status, they and their fifth are likewise redeemed onto a perutah’s worth in the coin I designated for this purpose.
After Completing the Process:
Wrap the “one percent plus” (that was set aside) in a bag and place it in the trash.
You may now eat the remaining fruits
